Minneapolis Edible Boulevards (MEB) is excited to announce its Celebrating Our Roots cooking class series, inviting neighbors across Minneapolis (and beyond) to learn how to prepare traditional dishes and plant-based meals rooted in wellness and culture. These upcoming free classes are designed to honor and uplift culinary traditions from our Green Zone neighborhoods while fostering community connection. MEB’s mission is to empower residents to grow and prepare nutritious food. Our August class will embrace our Latino community’s traditions.

Dish: Ecuadorian Llapingachos Stuffed with Plant-Based Chorizo & Wild Chive Aji Verde
Registration: Free and open to the public.
Registration is necessary for Zoom attendees. It will be found on our Facebook, Instagram and website pages the closer we get to each class.
What to Expect: each class includes a live cooking demonstration of an affordable, delicious, and nutritious entree, with a focus on garden fresh ingredients. This year’s cooking classes also feature at least one ingredient that can be foraged or gathered and participants will learn how to integrate this ingredient into the meal. These classes are part of Minneapolis Edible Boulevards’ Celebrating Our Roots annual series, which centers BIPOC voices and traditions from the Minneapolis Green Zone neighborhoods. All are welcome to join this celebration of cultural resilience, food sovereignty, and shared learning.
Following the demonstration, attendees are invited to sample the dish, take a tour of the garden, and pick up a copy of the recipe to recreate it for themselves at home. Please join MEB to grow and learn in community with these amazing instructors!
